Make a simple cheese and onion pie

In this edition of Titli's Busy Kitchen, Titli Nihaan shows us how to make a cheese and onion pie. This is a great comfort food and it's really quick and easy to make. Here's what you'll need: 400 grams sliced onions, 400 grams grated cheese, 500 grams of pastry (we're using ready-made pastry), and 2 eggs. Put the onions in a pot and add just enough water to cover them. Bring that to a boil. When it comes to a boil, turn the heat down and simmer gently for 10 minutes. This softens the onions and takes some of the harshness out of them. Now, drain the onions and put them into a large bowl. Add a teaspoon of mustard (we're using Coleman's mustard), and season well with salt and lots of pepper. Add in the cheese and the two eggs which are beaten. Mix really well. Next, line an 8 inch pie dish with half the pastry. Add in the pie mixture and spread it around. Then use the other half of the pastry to make the lid. Crimp the edges of the pie together with a fork to make a seal. Trim away the excess pastry, and make a few slits in the top of the pastry to let the steam out. Now brush the top with milk, which will give it a nice brown, golden texture and color to the top of the pie. Now it's ready to go into the oven at 200 degrees celsius (which is 392 degrees fahrenheit) for 30-35 minutes. After 30-35 minutes, the pie top should be lovely and brown. Leave it to cool for about 15 minutes before you slice it. Your cheese and onion pie can be served with some fries and peas, maybe a salad, or whatever you like. Enjoy!
