How to Make authentic Mexican cheese enchiladas

You've had chicken and beef enchiladas, now try the version - vegetarian except for the chicken stock (maybe you can substitute with vegetable stock). This Mexican dish is so simple to make. Follow along in this cooking how-to video to learn how to make Mexican cheese enchiladas.

Ingredients for cheese enchiladas:

8 corn tortilla

400 ml enchilada sauce

400 g Cheese - (cheddar, (mozzarella, asiago or queso oaxaco

225 ml chicken stock

5 spring onions

3 tbsp coriander

Lettuce

1 avocado

lime juice

4 tbsp soured cream

salsa of choice
